Tandoori Chicken Chutney Pizza

Oh yes!  This pizza is definitely as good as it sounds!  Indian pizza is incredibly satisfying, full of flavor and a super creative twist on your everyday pizza.  The first time I experienced this delightful taste was when I visited my aunt and uncle in San Francisco.  There was one shop close to where my aunt and uncle lived that made piping hot Indian pizzas.  We ordered two different kinds but the one of which I can still remember had  layers of spinach, grilled shrimp and feta cheese.  It was soooo good.  Ever since tasting Indian pizza, I have been obsessed with trying to make it.  Over the years,  my mom and I have experimented with several flavor combinations and luckily some have turned out to be quite tasty.  One of these Indian pizzas is this tandoori chicken chutney pizza.  It's spicy, sweet and salty and oh so delicious! 

This pizza is made simple by using store-bought bread dough for the crust.  The crust is rolled thin and placed on the grill.  It's  then topped  with cilantro-mint chutney, grilled tandoori chicken, red onions and feta cheese.  This pizza is frequently requested by Mihir and our friends.  It is definitely a crowd-pleaser and makes for a stand-out pizza. You will definitely impress yourself and your guests with this pizza!  Enjoy!


Tandoori Chicken Chutney Pizza:
Makes approximately 2 pizzas

Ingredients:
2 hand-fulls of store-bought bread dough
1/2 cup olive oil
4 tablespoons cilantro-mint chutney
1/2 stick (4 ounces) cream cheese
1 recipe tandoori chicken, cubed into 1 inch pieces
1 medium red onion, thinly sliced
1 (8 ounce) block feta cheese, crumbled

Method:

Preheat grill to high heat and lightly oil grate.

Make CrustUsing one hand-full of store-bought bread dough, at a time, roll bread dough into a ball and place on a floured work surface.  Stretch and roll the ball of dough until desired size and shape is reached.  Place crust on a large baking sheet and brush with olive oil.  Slide crust onto grill and cook for 8 minutes or until dough begins to rise and grill marks start to appear.  Remove crust from grill and set aside.

Assemble Pizza: In a small bowl, mix together cilantro-mint chutney and cream cheese.  Spread mixture on grilled side of crust.  Top with tandoori chicken, red onions and feta cheese.  Place pizza back on grill for 5 minutes.  Allow pizza to cool for 1 minute before serving.

    One needs to try it to know the difference.
